With the holidays upon us it is always beneficial to review mindful eating strategies. Mindful eating is the practice of eating that focuses on being fully present and aware of your thoughts, feelings, and senses while eating. This way of eating takes the focus off dieting and rigid eating behavior and assists with helping you understand your own hunger, reasons for eating, and overall enjoyment of food. On September 1, 2024, Coburg Village celebrates twenty-five years of providing high-quality 55+ independent living in Rexford, New York.

Since opening in 1999, more than 1,000 people from the Capital Region and beyond have made Coburg Village their home. The community offers a combination of elegant independent senior living in a peaceful, rural setting and an array of services and amenities that promote independence and a high quality of life. For many residents, living at Coburg Village allows them the freedom to remain active and engaged in their community.

On Tuesday, April 16th, eighty Coburg residents attended a Model Seder open to residents of all faiths. The gathering was organized by residents Natalie Oshins and Reeva Nowitz. The word ‘Seder’ means ‘order’, and is called such because the story being told follows a certain order that takes the participants through The Exodus from slavery to freedom. Participants at the seder read from a special book called ‘The Haggadah’, (‘the telling), and these symbolic foods are put on the Seder Plate, which helps to tell the story ....
